JOB SCOPE

Supporting successful operations

  • Assist the General Manager in ensuring that guests are provided outstanding service befitting a world-class establishment
  • Build and cultivate relationships with VIPs, with a focus on Casino patrons/hosts, as well as patrons with a high propensity to spend on wines
  • Support the General Manager in managing cost discipline (with a focus on beverage cost management)
  • Ensure regular refresh of outlet’s offerings in line with seasonality, guest preferences and regional trends, with a focus on elevating the outlet’s wine & beverage programme
  • Work with Management team to address guest feedback, including suggesting changes to internal SOPs to deliver the best possible experience for patrons
  • Work with internal stakeholders to drive projects, including but not limited to capital projects, company-wide campaigns, repair and maintenance projects etc.
  • Support the venue’s adherence to Responsible Service of Alcohol protocols
  • Work with the Management team to drive key priorities including productivity, training and workplace safety etc.
  • Work with the Management team to drive a culture of compliance built on high ethical standards, including ensuring that requirements for hygiene standards are met and that team members participate actively in in Sustainability and CSR initiatives

Driving wine  programme

  • Lead a core team of wine specialists and drive a distinctive wine programme that will differentiate the outlet amongst its competitors
  • Refresh the venue’s wine programme on a regular basis to ensure that wine programme remains relevant & exciting
  • Work with Procurement and suppliers to maintain a robust portfolio and pipeline of spirits, including Chinese baijius, sakes, rare whiskies etc
  • Work closely with the Executive Chef and General Manager to review and update wine offerings regularly
  • Review inventory and maintenance of glassware and other wine-related equipment (e.g., wine list covers, ice buckets, decanting equipment, specialty glassware, bar equipment) to enable the smooth delivery of quality wine service
  • Build and cultivate deep relationships with regional and global wine suppliers and distributors, in collaboration with Procurement, to maintain a portfolio of distinctive wines for the venue
  • Support talent development through an extensive training programme for team members in the venue, in the area of wines and spirits
  • Keep abreast with the latest developments in the world of wines & spirits, and serve as a main source of knowledge in this field
  • Ensure all wine & spirit stocks are used, stored, and accounted in adherence to the Company’s policies and procedures
  • Communicate closely with sommeliers from other outlets and cross-share new offerings or industry training platforms, in a bid to uplift property’s overall wine programme.

 

JOB REQUIREMENTS

  • Minimum 5 years of managerial experience in F&B, preferably in fine-dining establishments and including experience serving as the Head Sommelier / Sommelier of these establishments.
  • Relevant qualifications under the Court of Master Sommeliers, WSET or equivalent preferred but not mandatory
  • Robust knowledge of international wines
  • Equipped with a comprehensive set of F&B operational skills and practical wine service know-how
  • Possesses a can-do spirit, always thinking out of the box and never satisfied with the status quo
  • Able to manage complexity and a dynamic working environment
  • Proficient in basic accounting, budgeting and inventory management skills
  • Strong leadership skills and ability to motivate team
  • Have a well-groomed, professional appearance
