Job Scope

  • Ensure highest level of sanitation and hygiene standards in all Food & Beverage (F&B) area and restaurants under Marina Bay Sands
  • Comply and ensure Marina Bay Sands (Las Vegas Sands Corporation) hygiene policies are strictly adhered to on a daily basis
  • Lead a team of Hygienist to ensure all food served to guests and employees are free of microbiological, chemical and physical contamination, and all work areas conform to minimum requirements set by local health and food authorities
  • Involve in all aspects of hygiene audit in F&B
  • Ensure supplier audits and tracking are completed regularly
  • Perform regular hygiene audits in conjunction with chefs in their areas of responsibility including daily and weekly walkthroughs
  • Conduct training and workshops regularly for team members to ensure that hygiene and sanitation standards are maintained at required levels
  • Inspect the overall process of kitchen operations, including the critical areas of receiving, preparing, cooking, storing and serving of food and beverage
  • Attain and maintain the sanitation certificates as required ie. Hazard Analysis Critical Control Point (HACCP) or similar
  • Liaise with involved authority for all food safety inspections to be carried out at licensed premises, ensuring all food safety requirements are complied.
  • Manage and provide advice to stakeholders for foodshop licenses of all food establishments including application, amendment, renewal and cancellation.

 

Job Requirements

  • Degree in Food and Beverage Management, Food Science and Technology or other relevant field
  • Possess WSQ Conduct Food and Beverage Hygiene Audit
  • Minimum 3 years of experience as a Hygiene Manager or relevant job function in 5 star hotel or quality restaurant
  • Trained Food Hygiene Officer would be an advantage
  • Equip with HACCP/ISO 22000 knowledge
  • Willing and able to perform shift work or flexible work schedule
